DREAMER'S BACKGROUND:
Searching for decaf coffee became a pivotal quest early on in our journey. Initially, we contemplated the prospect of decaffeinating our own coffee. However, we encountered a roadblock—the available methods involved processing vast quantities (exceeding 40,000 pounds) at once and outsourcing this process to other countries. This approach conflicted with our commitment to delivering the freshest coffee direct from family farms. The extended lead times, lengthy transit periods, and large-scale operations didn't align with our ethos of quality and freshness.
Our exploration led us to Selva Negra, a family-owned farm nestled in Nicaragua, which conveniently warehouses its decaf in Atlanta, GA. Selva Negra captivated us with its exceptional decaf, showcasing superior taste, sustainable farming practices, and utilization of the mountain water process for decaffeination.
But what exactly is the mountain water decaf process? In essence, it involves utilizing pure water sourced from high-altitude mountains to steam the green beans and prepare them for extraction. Through a water-based saturation solution, caffeine is extracted from the beans while preserving their natural flavor compounds. The outcome? Decaffeinated beans brimming with rich flavor, devoid of harsh chemical residues.
